Canada is especially known for its rye whisky. This is whisky that is mostly made from rye, but that doesn't mean everything from Canada falls under that category. So where does that association come from? For that, we have to go back in time.
Long ago, Canadian whisky was predominantly made from wheat, as it was widely available. When Dutch and German immigrants arrived in Canada, they added rye to the recipe. This style became so popular that it eventually became common to ask for 'rye' in the store, even if rye wasn't the dominant grain in Canadian whisky. Eventually, the wheat was replaced by corn, but the nickname didn't disappear. There are still Canadians who call their whisky 'rye', regardless of whether much rye is actually used.
There are several major producers in Canada. For example, there's Hiram Walker, where Lot 40 Rye Whisky is made, but also Black Velvet and Gimli (Crown Royal). There is no very strict regulation for Canadian whisky. Each of the major distilleries has therefore developed its own production process. But of course, there are some similarities.
The distance between the distilleries is enormous. That is why most Canadian whisky is made at one distillery, just like Scottish single malt whisky. Most Canadian distilleries also do not use mashbills, a kind of recipe for the different grains. Instead, they ferment and distill the different grains separately. After aging in oak barrels, these different distillates are blended together.
In Canada, it is allowed to flavor a whisky with 9.09% of drinks other than whisky. This rule was originally created as an aid for American producers. The idea is that some American drink could be added to the Canadian whisky. If this was then exported to the US, less tax had to be paid.
Nowadays, this option is seldom used. And when Canadian master blenders do use it, it's to add an extra layer of complexity to the whisky. For instance, J.P. Wiser's Union 52 contains a small amount of 52-year-old Scotch whisky.
