Mortlach, a distillery that is very well regarded among whisky enthusiasts, is one of the best-kept secrets of the Scottish whisky world. The nickname 'The Beast of Dufftown' says a lot about the style you can expect, yet Mortlach is popular with both beginner and advanced whisky drinkers. One certainty is: this distillery produces world-class single malt.
Most distilleries in Scotland distill their whisky twice. There are of course some exceptions, such as Auchentoshanand Springbankwhere the whisky is distilled three times. However, at Mortlach, they take a completely different approach: the whisky is distilled 2.81 times. But how is that even possible?
Of course, it all starts in the famous stillhouse of the distillery. What immediately stands out is that none of the six stills at Mortlach are exactly the same. Just that alone deviates from other Scottish whisky producers. By the way, one of those stills is affectionately called 'The Wee Witchie.' But it's the way those stills are used that gives Mortlach such a distinctive, 'meaty' flavor.
Through a complicated mathematical calculation, it has been determined that Mortlach distills its whisky 2.81 times. But in a nutshell, here’s how it works: the whisky is partially distilled twice (malty, grainy), three times (full fruity flavors), and four times (spicy). By combining these three variants, the bizarre 2.81 times distillation results.
Once there was a village called Mortlach, but that has long been swallowed up by Dufftown. This small place is sometimes referred to as the whisky capital of Scotland. With Glenfiddich, Balvenie and Mortlach counts Dufftown among its number of the most renowned names in the Scotch whisky industry. And there are even a handful of other distilleries located in and around the village.
Mortlach was founded in 1823 and was the first legal distillery in Dufftown. However, it was George Cowie and his son Alexander Cowie who elevated the distillery to great heights. They did this starting in the mid-1850s. Unfortunately, the origins of the unique distillation process are not known. Today, the distillery is owned by Diageo, which plans to double Mortlach's capacity.
