Kavalan Whisky does not come from one of the traditional whisky-producing countries, but from Taiwan. The distillery was founded in 2005 and thus has existed for a relatively short time, but still Kavalan has been racking up prestigious awards. The Kavalan Vinho Barrique was for example already named the best single malt whisky at the World Whiskies Awards. But actually everything they bring to the market is of top quality, whether it’s the King Car, Concertmaster, Podium or Solist Series.
Making whisky is no longer exclusive to countries like Scotland, Ireland and America. It is now happening all over the worldOne of the best whisky distilleries is now even located in Taiwan. Kavalan was founded by Tien-Tsai Lee. His son Yu-Ting Lee is currently leading the company.
Very early on, expertise from Scotland was sought. The man who was hired for that was Jim Swan. This whisky legend passed away in 2017 but was involved in many of the new, modern distilleries that saw the light of day in this new millennium. Kavalan, however, is undoubtedly one of his greatest success stories.
In particular, the whiskies that fall under the Kavalan Solist label opened the eyes of the rest of the whisky world. These are all bottled at cask strength and have matured in all kinds of different casks. Think of Fino, Vinho Barrique, Bourbon, Brandy, Oloroso, and Port.
In comparison to a traditional whisky country like Scotland, Taiwan is on the other side of the world. The climate in Taiwan is therefore completely incomparable. And that has its advantages. Kavalan whisky is generally quite young, but the flavor intensity is enormous nonetheless. That has everything to do with the warm temperatures and high humidity.
At the distillery, there are two warehouses five stories high. An interesting fact is that the barrels are bound together because there is a risk of earthquakes in that area. On the upper floors of the whisky warehouses, it can sometimes reach 42 degrees Celsius. This means that every year about 10 to 12% of the whisky evaporates. This phenomenon is also called the angel's share for comparison: in Scotland, the angel's share averages about 1 to 2% per year.
Due to the high temperatures and severe temperature fluctuations, there is a lot of interaction between the whisky and the oak barrels. This means that a lot of flavor is extracted from the wood. Much faster than in Scotland, which is why Kavalan tastes very mature even at a young age.
