The village of Tullamore in the heart of Ireland is Celtic for 'big hill'. Dew means 'dew', but it was one of the earlier owners, Daniel E. Williams, who connected his name to Tullamore Dew with his initials. In the distillery from 1829, different whiskey was distilled than now. The Tullamore Dew back then was spicier, sharper, and heavier. During a visit to the United States, Desmond - the grandson of Daniel - noticed a demand for lighter, softer, and approachable whiskeys. Inspired by this, he created a blend that still serves as a model for contemporary Tullamore Dew.
After the war, the Irish whiskey market collapsed and only a small number of distilleries remained. Also around the Tullamore Dew distillery, it remained quiet for a long time, and production changed hands several times before eventually moving to Midleton. Meanwhile, the old distillery in Tullamore has been renamed the Heritage Centre, where the history of whiskey and the town is told.
The basic ingredients for Tullamore Dew are water, yeast, and grain, including barley and corn. These are mixed with grain whiskey. Tullamore Dew, like all other Irish whiskeys, is distilled three times and then aged for a minimum of three years.
