Penderyn is made at the distillery of the same name in the famous Brecon Beacons National Park in Wales. The idea for Penderyn arose when a group of friends had a drink together at The Glancynon Inn. There it was decided to bring the lost craft of whisky distillation back to Wales. Before Penderyn, the Welsh Whisky Company was the last distillery in Wales, but that company closed its doors over 100 years ago.
On Thursday, September 14, 2000, Penderyn made whisky for the first time. whisky. This was made in a unique still (more on that below), causing the new make spirit to flow out of the still at a remarkable 92%. In 2002, the late master distiller Jim Swan was brought on board. He played an important role in determining Penderyn's unique style.
Although Penderyn now also has traditional stills (similar to what you see in Scotland ), their Faraday still is a real eye-catcher. It is actually a combination of a regular still and a distillation column. The alcohol vapors from the still slowly make their way to the column, which is mounted on top of the still. The column contains various perforated plates, allowing the vapors to condense and evaporate again repeatedly.
Penderyn uses this process to produce the smoothest whisky possible. According to Penderyn, this not only results in more complexity and depth but also removes unwanted chemical components from the whisky. Ultimately, the new make spirit has a strength of 92%. This is reduced to 67% before the spirit is filled into wooden casks.
Penderyn always first ages in former bourbon casks from Tennessee and Kentucky. A large portion of the casks come from Buffalo Trace, a bourbon that is highly regarded worldwide and where great casks are used.
The team at Penderyn closely monitors the progress of the casks. At exactly the right moment, the whisky is transferred to former Madeira casks, a fortified wine. Penderyn has a good relationship with a cooperage that makes casks for the best vineyards in Madeira, but casks that previously aged sherry, red wine, port, or peated whisky are also used.
