Suze is a French gentian liqueur with a bittersweet flavor, distilled from the root of the gentian plant from the mountainous regions of central France and Auvergne. Suze has been produced since 1889, with a large portion of the roots still harvested by hand. Gentian root is traditionally used in European bitters and aperitifs for its natural bitterness.
