Zacapa XO ist eine Mischung aus 6 bis 25 Jahre alten Rumsorten. Die Mischung wird extra in alten Cognac-Fässern aus französischer Eiche gereift. Die niedrigen Temperaturen bewirken eine langsame Reifung, während der niedrige Luftdruck den Holzkontakt erhöht. Für das Solera-System werden Bourbon-, Sherry- und Pedro-Ximenez-Fässer verwendet.
