Bereits 1703 wurde in der Mount Gay Destillerie auf der Insel Barbados Rum hergestellt. Damit ist sie wahrscheinlich die älteste arbeitende Rum-Brennerei der Welt. Traditionell arbeitet sie noch immer im englischen Stil mit kupfernen Pot Stills, in denen sie zweimal destilliert. Eclipse ist nach der totalen Sonnenfinsternis und dem Erscheinen des Kometen Halley im Jahr 1910 benannt. Die gerösteten Ex-Bourbon-Fässer weisen auch leichte Rauchnoten auf.

Flor de Cana (Blume des Zuckerrohrs) ist der berühmteste Rum Nicaraguas. Die Brennerei wurde 1890 eröffnet und befindet sich am Fuße des Vulkans San Cristobal im Nordwesten. Die Destillerie wurde von der Familie Pellas gegründet. Heute ist die fünfte Generation an der Macht. Ihre Rums werden aus Zuckerrohrmelasse im spanischen Stil hergestellt. Der 7-jährige Rum ist ein Gran Reserva und reifte in ehemaligen Jack Daniels-Fässern.

Mit einer Geschichte, die bis ins Jahr 1908 zurückreicht, wird Ron Abuelo Añejo Rum von Varela Hermanos SA in Panama, Mittelamerika, hergestellt. Don José Varela Blanco gründete die erste Zuckerfabrik in der damals neu gegründeten Republik Panama und gehört zu den wenigen Produzenten, die ihr eigenes Zuckerrohr anbauen. Diese jüngste Spezialität reifte 3 Jahre in amerikanischer Weißeiche. Pur ein Genuss, aber auch hervorragend zum Mixen geeignet.

El Dorado Rum wird in der Diamond Distillery hergestellt, der letzten noch existierenden Rum-Destillerie in Guyana. Alle El Dorado-Rums werden mit Melasse hergestellt, die von der örtlichen Zuckerfabrik aus 100 % Demerara-Zucker produziert wird. Die Diamond Distillery kann eine ganze Reihe verschiedener Rumsorten herstellen, wovon der 8-jährige El Dorado profitiert. Chairman's Reserve hat sich zum Flaggschiff unter den St. Lucia-Rumsorten entwickelt und ist für seinen harmonischen Stil und seine ausgewogene Finesse bekannt.

Goslings - Black Seal ist ein unverwechselbarer, dunkler Rum, der auf den Bermudas geblendet wird. Der Rum reift 3 bis 6 Jahre in neu gecharterten Fässern aus amerikanischer Eiche, die zuvor für die Reifung von Bourbon verwendet wurden. Goslings Black Seal wird sowohl in Pot Stills als auch in kontinuierlichen Brennblasen destilliert und ist bereits seit dem 19. Jahrhundert. Er heißt Black Seal nach dem schwarzen Siegellack, mit dem die Champagnerflaschen versiegelt wurden, in denen er aus der britischen Offiziersmesse zurückgewonnen wurde.

Dieser Rum ist eine Mischung sorgfältig ausgewählter dominikanischer Rums, die bis zu sechs Jahre in gebrauchten amerikanischen Eichenfässern reifen, die ursprünglich für Bourbon vorgesehen waren. Die Appleton-Plantage existierte bereits 1655, als die Engländer Jamaika von den Spaniern eroberten. Seit 1749 wird dort auch Rum hergestellt. Der Appleton ist ein Rum im englischen Stil, der Jamaica Rum ist ein sehr harter Rum mit Früchten und einem Hauch von Gummi. Der Rum wird Pot Still destilliert und in Jack Daniel's Fässern gereift. Dieser Signature ist ein Blend aus bis zu 15 Rums, nach dem Blending wird der Rum noch einige Monate in neuen Eichenfässern gereift.

Planteray – Original Dark ist eine Mischung aus Destillaten von Barbados und Jamaika. Nach der Destillation reift der Rum in Eichenfässern, die zuvor für Bourbon verwendet wurden.
