Pernod is a French anise aperitif and one of the best-known brands in the pastis category. The brand was founded in 1805 by Henri-Louis Pernod and emerged as a successor to absinthe after the French absinthe ban of 1915. Pernod has an alcohol content of 40 % and is traditionally diluted with cold water, usually one part Pernod to five parts water.
