Caol Ila is the Scottish Gaelic name for Sound of Islay, the waterway that separates Islay from the neighboring island of Jura. Although many Scottish distilleries can boast stunning views, few can match the vistas from the still house at Caol Ila. It is the Paps of Jura, a trio of mountains on the west side of the island of Jura, that dominate the view. In this particularly beautiful setting, the distillery employees undoubtedly come to work with great pleasure.
The result of their craft is a single malt whisky with briny aromas and a pleasant, soft smokiness. With their whisky, Caol Ila stands shoulder to shoulder with other legendary distilleries on Islay, which is the cradle of some of the most famous Scotch whiskies in the world. The 12-year-old edition is a delightful introduction, while the older siblings showcase a new level of elegance. Enthusiasts of fine single malt whisky will find themselves absolutely in the right place at this distillery.
Hector Henderson is the founder of Caol Ila. He did this in 1846 when he built a modest distillery in a small bay next to Port Askaig. On the east coast of Islay, he embarked on an adventure that continues into the 21st century.
Over the years, the distillery has had several owners. Since 1927, Caol Ila has been owned by Diageo, now a large multinational that owns several Scottish whisky distilleries. This organization decided to demolish the distillery in 1972 and build a new, more efficient, and larger version. A total of six stills were installed. These stills are an exact replica of the stills that were in the old distillery. The barley is still malted in Port Ellen, a village elsewhere on the island. The same spring in the nearby Loch nam Ban is still used.
With the opening of the new distillery, Caol Ila became the largest whisky producer on Islay. Most of Caol Ila's whisky is intended for the blends of Johnnie Walker. However, the single malts from this distillery can compete with the best that Scotland has to offer.
