The history of Bacardi rum begins in picturesque Santiago de Cuba in 1862, when the founder, Don Facundo Bacardi Massó, started a revolutionary and innovative rum distillation enterprise that would change the drinking culture forever. Don Facundo, a Spanish immigrant, began his quest for a refined rum that was smooth and light in flavor, and that could compete with the robust and sharp rums that were at that time in Cuba were common.
In his quest, Don Facundo introduced a number of groundbreaking techniques, including filtering rum through charcoal and using white oak barrels for aging. These innovative methods allowed Bacardi rum to develop a delicate and smooth taste, which quickly became popular among Cubans. The original Bacardi rum, known as the "Superior," quickly became the distillery's flagship. The iconic Bacardi bat logo was introduced as a tribute to the bats that lived above the rum barrels in the distillery and became a symbol of prosperity and good luck.

The production process of Bacardi starts with the careful selection of the best sugarcane, one of the main ingredients of rum. The sugarcane stalks are harvested and processed to obtain sugarcane juice, which forms the basis for the fermentation process. The sugarcane juice is subjected to a fermentation process where natural yeasts are added to convert the sugar into alcohol. This fermentation process can take several days and plays a crucial role in developing the unique flavor profiles of Bacardi rum.
After fermentation, the resulting alcohol mixture is distilled in columns. This distillation process, a masterful craft that requires the art of preserving and balancing aromas, ensures that the pure and clear alcohol is separated from unwanted substances.

Nowadays, Bacardi is made in Puerto Rico, Mexico, and India. And although they are modern distilleries, the rum is still largely made according to the recipes and production methods of founder Don Facundo. Most important is the yeast strain, La Levadura Bacardi, which is responsible for a large part of the flavor.
Most of the rum (about 85%) is produced in Puerto Rico. There, the largest Bacardi distillery is located at San Juan Bay. This Cathedral of Rum is the most impressive rum distillery in the world: more than 100,000 liters are produced every 24 hours.
