Hibiki whisky is produced by Suntory one of the most prominent distilleries in Japan. Suntory, founded in 1899, has a rich history and heritage in distilled beverages, and Hibiki is one of their most prominent whisky brands.
The story of Hibiki began in the 1980s when Suntory's master distiller, Keizo Saji, decided to create a whisky that reflected the harmony of Japanese nature and culture. The result was Hibiki, which was first introduced in 1989. The name 'Hibiki' is Japanese for 'resonance' or 'echo,' which perfectly fits Saji's vision of creating a whisky that can evoke emotions and memories.
The story behind Hibiki is actually the story of Suntory. You know, the whisky that played such a prominent role in the film Lost in Translation with Bill Murray. Suntory was founded in 1899 by Shinjiro Torii, an ambitious man born for success. Within ten years, his own store had a renowned reputation, but his dream was to make whisky. That succeeded in 1923 with the establishment of the very first whisky distillery in Japan, Yamazaki. Today, Suntory is one of the largest beverage producers in Japan.
Hibiki was launched in 1989 to celebrate the 90th anniversary of the parent company Suntory. Since then, this prestigious brand has grown into an award-winning Japanese blended whisky. Hibiki is now synonymous with the extremely high quality that Japanese whisky is known for.
Hibiki is an artistic masterpiece in the whisky world. This whisky is the result of tasting and combining the 1,000,000 casks of whisky that Suntory had. The current master blenders of Hibiki taste up to 300 whiskies a day to maintain the high quality of the whisky. Or as founder Shinjiro Torii once said: "To become a Master Blender at Suntory, you must be able to communicate with whiskies that cannot talk."
Thought has also gone into the design down to the last detail. The label is made from traditional Echizen paper and the calligraphy is a reference to the centuries-old Japanese traditions in that regard. The round bottle has 24 notches; a derivative of the Japanese lunar calendar. In addition, the color purple has been deliberately chosen, as it is considered the most noble color by Japanese people.
Suntory has several distilleries and these are the heart of Hibiki.
What makes Hibiki whisky truly special is the careful and artisanal production process that is applied. Like Scotch whisky, Hibiki is made from the finest ingredients: pure water, high-quality grains, and carefully selected yeast cultures. The grains are ground and malted before being distilled in traditional copper pot stills
One of the distinctive aspects of Hibiki is the use of different types of barrels for aging the whisky. Suntory utilizes American oak barrels, Mizunara oak barrels, and European sherry casks to develop various flavor profiles and aromas. These barrels are carefully selected and monitored to achieve the perfect balance and complexity.
Whether you are a whisky connoisseur looking for complexity and depth or a newcomer wanting to get acquainted with the world of whisky, Hibiki is an excellent choice. So, the next time you have the opportunity, consider trying a glass of Hibiki whisky and enjoying the flavors it has to offer.
