When Kilchoman opened its doors in 2005, it was the first new distillery onIslayin 120 years. Since then, this artisanal producer has grown into a cult distillery with an enormous number of fans. Kilchoman is one of the younger distilleries in Scotland, but it was ahead of the whisky craze of the late 2010s. At its opening in 2005, Kilchoman was one of the first new distilleries that Scotland had seen in decades. In fact, it had been 120 years since a new distillery had been added on Islay.
Despite the young age of the distillery, the location of Kilchoman on the west coast of Islay holds historical significance. The Irish MacBeatha family once lived there. These doctors translated medical texts about distillation from Latin to Scottish Gaelic. Therefore, there is a theory that Islay may have been the first place in Scotland where distillation occurred. If that is the case, then Kilchoman now stands on the birthplace of Scottish whisky.
Kilchoman is the dream of Anthony Wills, who settled on Islay with his family. The wish was to make as much use of local ingredients as possible to create a truly original Islay whisky. In 2009, they released their very first single malt to the market. Since then, Kilchoman has developed into an established name that is sold all over the world.
In the early days of Scotch whisky, it was mainly farmers who made whisky from their leftover barley. Now that process is separated. Farmers grow the barley. Whisky is then distilled at one of the more than 100 large distilleries in Scotland. Kilchoman is one of the few exceptions in the modern whisky world.
At Kilchoman, part of the barley used is grown on-site. The land around the distillery is very fertile and annually produces 200 tons of barley. This accounts for about 25 percent of Kilchoman's total whisky production. After the barley is harvested, it is malted by the distillery itself.
During this process, which usually takes place at specialized maltings, starch is converted into sugar. Because Kilchoman manages this in-house, it gives their whisky a distinctive flavor that no other distillery can replicate. The Kilchoman 100% Islay is, for example, a bottling made entirely from barley grown on Islay.
