Flor de Caña is a delicious rum from Nicaragua that has been made by the same family for many generations. Although the distillery is located in Nicaragua, the history of this famous rum brand notably begins in Genoa, Italy. From there, Alfredo Francisco Pellas Canessa emigrated to Nicaragua, where he established the San Antonio mill in 1890. This is now one of the oldest sugar mills in the country.
And where sugar is produced, it usually doesn't take long before rum is distilled. Thus, in the early years of the sugar mill, young rum was already being made while the older rum was kept for the operators of the mill. Eventually, in 1937, Compañia Licorera de Nicaragua (CLN) was established. This company is still responsible for making Flor de Caña today. Compañia Licorera de Nicaragua is now run by the fifth generation of the Pellas family.
Flor de Caña, which loosely translates to 'Flower of the Sugarcane', is completely made by Compañia Licorera de Nicaragua. They take care of the ingredients, the aging, and the bottling. The distillery is located just 8 kilometers from San Cristobal, the most active volcano in Nicaragua, standing at an altitude of 1745 meters.
The volcanic climate obviously has a significant impact on the surrounding land. Since the 16th century, the volcano has erupted about 30 times, making the soil very fertile. The water is also enriched with minerals. Additionally, the warm volcanic climate causes a lot of interaction between the rum and the oak barrels during aging.
Molasses is made from sugar cane at the Compañia Licorera de Nicaragua's own sugar plantation. This is then quickly shipped to the distillery. There, the molasses is diluted with water, after which the fermentation of 36 hours begins. During this fermentation, excess carbon dioxide is collected and sold to the Coca Cola factory in Nicaragua. Flor de Caña is distilled 5 times in a distillation column powered by steam generated from biogas from the sugar mill.
Due to political unrest in Nicaragua in the 1970s and '80s, very little could be exported, which means Flor de Caña now has a great stock of old rum. Master blender Pedro Uriate knows how to handle this: he brings rum to a market age of 25 years. The aging takes place in traditional warehouses without any climate control. As a result, a lot of rum evaporates each year, but this only enhances the flavor.
The distillery of Flor de Caà±a is one of the most environmentally friendly in South America, perhaps even in the world. They have ISO900 and ISO14000 certification, which is only granted to companies that minimize their CO2 footprint and have no negative impact on their environment during production. All by-products are recycled and almost all the water is reused. On top of that, Flor de Caà±a also has a Fairtrade certification.
