Chartreuse is an iconic French herbal liqueur, produced by the Carthusian monks since 1737. The name is derived from their monastery, the Grande Chartreuse, located in the Chartreuse mountains in the French Alps. The liqueur is famous for its complex flavor and rich history.
Different versions are made that all contain the same 130 botanicals, but differ in proportions, aging methods, and maturation duration. The basis of all liqueurs is the elixir, still made according to the complex recipe that the monks acquired in 1605, which was already considered very old then. The word elixir comes from Arabic and means 'the philosopher's stone.' The formula was perfected in 1737 after years of study and experimentation by Brother Jérôme Maubec. The Chartreuse liqueurs are among the most complex products in the beverage field.
Production involves the careful sorting, drying, and maceration of the botanicals, followed by distillation and aging in oak barrels in the cellars of Voiron, known as the longest liqueur cellars in the world.
Due to the limited production by the monks, the liqueur is in demand worldwide and sometimes hard to obtain. The monks cannot meet the growing demand because they do not want to overexploit nature and because they wish to focus on seclusion and prayer in their lives.
There are two main variants, whose aging takes about 4 to 5 years.
Green Chartreuse: With an alcohol content of 55%, this variant has a powerful, herbal flavor with hints of mint, pine, and other fresh herbs. The green color comes from the chlorophyll of the plants and herbs used.
Yellow Chartreuse: With a milder alcohol content of 43%, this variant is sweeter and softer in flavor, with hints of honey, citrus, and saffron. The yellow color comes from saffron.
The green variant received a new boost in popularity when American bartender Murray Stenson reintroduced the classic cocktail 'The Last Word', a perfect mix of equal parts gin, green Chartreuse, maraschino, and fresh lime juice (22.5 ml per ingredient). The cocktail became a favorite among bartenders and cocktail enthusiasts worldwide.
Both variants can be drunk straight or used in cocktails.
