In 1608, Bushmills received a license from King James I. At that time, it was Sir Thomas Phillips who was allowed by the king to distill whiskey in the vicinity of the Bush River in County Antrim, which is now located in Northern Ireland. The distillation of whiskey in that region had already a long tradition dating back to the 13th century. This is based on the story of an Irish general who held a drinking session before he marched into battle with his soldiers.
That license from over four centuries ago is proof that Bushmills is the oldest Irish whiskey distillery, although not everyone agrees with that. For although the license is indeed that old, the whiskey was first sold under the name Bushmills in 1784. And the current distillery was built in 1885. Therefore, Kilbeggan, which was founded in 1757, also claims to be the oldest distillery in Ireland.
The 19th century was the heyday for the Irish whiskey industry. At that time, whiskey from Ireland was much more popular than Scotch whiskey. The whiskey that took the world by storm was the so-called Single Pot Still Whiskey. This type of whiskey is made not only from malted barley but also from other grains. This gives the whiskey a completely different flavor than, for example, single malt.
Many distilleries opted for Single Pot Still Whiskey because it was the cheaper option. After all, taxes had to be paid on malted barley. However, Bushmills has never been tempted to use other grains. To this day, Bushmills produces Single Malt Whiskey: entirely made from malted barley. By the way, Bushmills does distill its whiskey three times, just like many other Irish distilleries.
The core range of Bushmills consists of a 10-year-old whiskey, a 16-year-old whiskey that has been finished in Port casks for 6 to 9 months, and a 21-year-old single malt that matured in Madeira casks for the last two years. Additionally, there are also Black Bush and Bushmills Original, two blended whiskeys.
