During this crucial process, important enzymes are formed in the barley, which later transform the starch into sugars. Alcohol can then be made from those sugars. Nowadays, barley is malted in large factories, but it used to be done by hand.
On a so-called malt floor, the barley was spread out. It had to be regularly turned over by hand. This was done with a large wooden shovel. The workers who performed this task year after year developed a condition where one arm hung a bit lower than the other. This was colloquially called a monkey shoulder.
