How is Zacapa Rum made?
Unlike many other rum producers, Zacapa makes its rum from so-called 'sugar cane honey' instead of traditional molasses. This is actually a concentrated version of the juice from sugarcane and lasts longer than pure juice. But it is particularly the aging that sets Zacapa apart from its competitors.
First of all, this happens at 2300 meters above sea level in the mountains of Guatemala. They call this place at Zacapa 'The House Above the Clouds', which is located on fertile volcanic soil. The decision to age the rum at this height was made by master blender Lorena Vasquez, who has worked for Ron Zacapa for 35 years. She herself says that she "has one of the most beautiful jobs in the world".
The aging then takes place in a Sistema Solera, where rum is partially transferred to other barrels as it gets older. You won't easily find a more complex solera system than that of Zacapa. The rum first ages in a variety of different types of barrels: ex-bourbon, ex-oloroso, ex-Pedro Ximénez, and ex-Cognac. It is then transferred to the solera system. It is almost too complicated to explain well, but the proof of effectiveness lies in the taste of Zacapa Rum.
Ron Zacapa 23
The most famous rum from Zacapa is undoubtedly the Ron Zacapa 23. Because of that name, it is often thought that this rum is 23 years old, but that's a bit more nuanced. Ron Zacapa 23 is actually a blend of different rums, ranging in age from 6 to 23 years. This age variation arises from the special Sistema Solera.
Around every bottle of this rum from Guatemala is a handwoven ribbon. It is made from dried palm leaves. This is a Mayan tradition that has existed for many millennia. The ribbons are made by 700 female weavers.
