Rum

This is how rum is made

The vast majority of rum is made from molasses. This is a by-product created during the production of sugar. In some cases, for example in so-called rhum agricole, fresh sugarcane juice is the main raw material. To turn the raw material into alcohol, yeast is needed. Many distilleries cultivate their own strain of yeast because it is very important to the final taste of the rum. After fermentation, which can sometimes take weeks, there is a sweet, alcoholic beverage of 4% to 8%.

To make rum from it, this beverage must be distilled. This can be done in traditional copper stills, as well as in more modern stills. The advantage of the columns is that distillation can be done continuously, whereas the copper stills can only produce in batches. Of course, the different distillation processes also create different flavor profiles. Production in copper stills usually produces a heavier, aromatic rum. Rum from a distillery column is generally a lot lighter in flavor.

With a few exceptions, rum matures in oak barrels after distillation. This is a very important part of whiskey production. During wood aging, the rum transforms from a young distillate to a mature drink that would not be out of place in your liquor collection either.

What is rum?

Rum is so enormously versatile that it is difficult to pigeonhole this drink. It may be made anywhere in the world, so there is even Dutch rum. But the best-known rums still generally come from the Caribbean. Some of the main rum regions include Barbados, Martinique, Jamaica, Guyana and Cuba. And no two rums taste the same, because in each region they do things slightly differently. So how do you know which rum suits you? You may already be able to judge for yourself. Traditionally, rum was actually mainly divided into white rum, golden rum and dark rum. White rum usually has a light taste, although certain rhum agricoles from the French islands have a fuller taste. Golden rum has a medium body and has usually aged for several years in oak barrels. Dark rum is the full-bodied, rich rum often made in traditional copper kettles. Long aging makes this rum perfect for drinking pure.

Sometimes rum is also classified by origin. In that case, for example, the Spanish, French and English styles are referred to. That classification is based on the colonial past of the Caribbean islands.

New rum classifications

However, many rum producers and rum drinkers today are looking beyond white or dark rum and provenance. In fact, the color of a rum is not all that determines its taste. That is why rum expert Luca Gargano introduced a new classification based on how the rum is made. Color no longer plays a role. In particular, it looks at the raw material and the type of boilers used. For example, is molasses or fresh cane juice used? And is there distillation in stills or distillery columns? Gargano eventually came up with the following list:

  • Pure Single Rum - made from 100% molasses in copper stills
  • Pure Single Agricole Rhum - made from 100% sugar cane juice in copper stills
  • Single Blended Rum - made from 100% Traditional Column and Pot Still rums
  • Traditional Rum - made in a traditional distillery column
  • Modern Rum - made in a modern distillery column

Pure means the rum is made entirely in copper stills. By Single, Gargano means that the rum is made at a single distillery.
