Cold distillation
Cold distillation seems like a contradiction. After all, distillation traditionally occurs by heating a liquid. But at Oxley Gin they use a new, innovative method. However, it wasn't without challenges: only after 8 years and 38 recipes were the distillers satisfied.
But what is cold distillation then? Firstly: cold distillation takes place in a vacuum. In that vacuum, the required boiling point for distillation is much lower than usual. Normally, the boiling point of alcohol is around 78 degrees Celsius, but in a vacuum, it can occur at temperatures between 25 to 40 degrees.
At Oxley Gin, they even managed to distill at a temperature of -5 degrees. This cold distillation keeps delicate flavors and essential oils intact, while they might be lost at high temperatures.
14 Botanicals
In total, 14 botanicals are used for 'Recipe 38'. Each of the botanicals plays an important role in the gin, so it took a while to find the right balance. Citrus comes through much more strongly with cold distillation, while the taste of juniper becomes much less dominant. That was a puzzle for the distillers.
In addition to juniper berries, grapefruit, lemon, and oranges, these are the other botanicals you find in Oxley Gin: meadowsweet, vanilla, anise, orris root, licorice, cacao, grains of paradise, cassia, nutmeg, and coriander. As a result, Oxley Gin is fresh and clear, with a lot of grapefruit and a lively juniper berry taste.
