The story of Bombay Sapphire begins in 1761 with Thomas Dakin. Thomas was only 24 when he established one of the first large distilleries outside London. Initially, he named his distillate Warrington Gin, a reference to the location of the distillery. Thanks to innovative distillation techniques, Warrington Gin quickly gained popularity.
It wasn't until the 1950s that the name Bombay Gin was first used for export to the US. At that time, the popularity of the Martini was exploited, a cocktail that also played an important role in the popular series 'Mad Men'. It's not an exaggeration to say that Bombay Gin then played a major role in the resurgence of gin. In the 1980s, the blue bottle was introduced. The new recipe did the rest. Nowadays, Gordon's is the only London Dry Gin that is more popular.
Laverstroke Mill is home to Bombay Sapphire Gin, the distillery where this delicious drink is produced. The flavor is determined by the so-called botanicals: a combination of different herbs and spices. Juniper is central, but in total, 10 different botanicals are used for the recipe. Among others, lemon peels and almonds from Spain, coriander seeds from Morocco, licorice from China, and grains of paradise from West Africa.
During distillation, these botanicals hang in a basket at the top of the still. As the still is heated, the alcohol vapors rise and essentially pass through the botanicals. During this process, they pick up the various flavors of the botanicals. It's actually comparable to steaming ingredients instead of boiling them in hot water.
Through a condenser, the alcohol vapors are turned back into liquid. Although flavorful, the alcohol percentage at that point is still far too high. Therefore, water from Lake Vyrnwy in Wales is used to achieve the final strength of 40% percent.
