William Mitchell decided in 1805 to leave the mainland and settle in Ireland. He purchased Crafton Street 10. A splendid property and started his own bakery.
Later in 1887, Robert Mitchell, a gentleman with great business insight, expanded the business into whiskey trading. He bought a new property around the corner at Kildare Street 21. In 1933, the Mitchell family sold the first Green Spot whiskey there: Jameson & Son 10 Year Old Green Seal @ 180/- per dozen.
When the Mitchell family entered the whiskey trade in 1887, it was at its peak and the demand for Irish pot still whiskey had never been so high.
There was an insatiable demand for high-quality Irish whiskey and many Irish distilleries were at full capacity. At that time, it was customary for traders to buy unaged whiskey and let it mature in their own warehouses. They then bottle the whiskey under the name of the distillery. This is called 'whisk(e)y bonding.'
The Mitchell family brought several whiskeys to market. Green Spot was bottled at 10 years old. Blue Spot at 7 years, Yellow at 12, and Red at 15 years. The name comes from the colored spot around the barrel.
Due to the difficult economic circumstances, only Green Spot remained.
In the 1960s, distilleries decided to let whiskey age and bottle it themselves to guarantee quality. This led to the demise of most whiskey traders. Due to the good relationship of the Mitchell family with the Jameson distillery, they still received enough unaged whiskey to let it age in the cellars of the Mitchell family in the heart of Dublin.
