Distilling has been an ancient craft that found its way to Europe via the Arabs and Greeks. Distilling has also been done in the Netherlands for ages. Indeed, around the 16th century we were highly regarded in this field. Our gin went all over the world. That was also pretty much when whiskey came to maturity. The Scots and Irish both think they invented whiskey. Different stories circulate, but the truth probably lies somewhere in the middle.

So, as mentioned, you can make whiskey from just three ingredients. Every distillery has its own water source. The composition of that water (for example, the minerals present) plays a role in the final taste. So do the grains used. Whisky made from barley (single malt) tastes very different from whisky made from corn or rye. Without yeast, we would be nowhere. In fact, this particular ingredient converts the sugars in grains to alcohol.

That conversion of sugar to alcohol occurs during fermentation. This is one of the most important aspects of whiskey making and is at the root of almost all of the flavors that make whiskey such a great drink. At the end of the fermentation period, there is what is called a wash. This is similar to beer, but without hops. However, the alcohol content at this point is still low (well below 10 percent). Distilling in copper stills eventually produces a strong alcoholic beverage. Distilling twice is usually enough, but some distilleries opt for triple distillation. The latter is especially common in Ireland.

The last step also takes the longest: barrel aging. Barrels can be large or small. Sometimes they are new oak barrels (bourbon, for example), but frequently former sherry or wine barrels are also used. Each type of barrel obviously provides a different taste.
