De Caol Ila distilleerderij is gebouwd in 1846. De single malts van Caol Ila zijn zeer schaars. Deze komt van onafhankelijk bottelaar James Eadie. James Eadie was een Schotse brouwer die in 1854 een belangrijke brouwerij oprichtte en een eigen recept had voor een Blended Scotch whisky. Van de originele James Eadie whisky zijn er nog maar een paar. Deze whisky rijpte 8 jaar op refill Bourbonvaten en is gebotteld in een oplage van 1189 flessen.
