Kilchoman is the newest (2005), but a traditional distillery of the famous whiskey island of Islay. Here is a sturdy, heavily peated whiskey made from malted barley on its own malting floors. In the kiln the malt smoked solely with peat smoke, making the typically strong smoky flavor created. This limited bottling, named after the rocky coast, has matured over four years in bourbon barrels and has ripened in Oloroso sherry casks. This gives the whiskey a spicy, sweet tinge inherited.
